Pizza Margherita

1 dough ball for a 9″ pizza
3 tablespoons of olive oil
6 basil leaves
Good pinch of rock salt
Black pepper
½ clove of garlic
1 tin chopped plum tomatoes
Mozzarella cheese

Blend tomatoes, olive oil, basil leaves, garlic, salt and pepper for 2-3 minutes until smooth to make the tomato sauce.

Flatten a dough ball into a 9″ pizza base, cover the base with the sauce but be careful not to go over the edges or your pizza will stick to the oven floor.

Sprinkle with mozzarella cheese, oregano and salt and a light drizzle of olive oil.

Place the pizza into the wood fired oven at 450-500°C and turn as necessary whilst cooking.

The pizza will take around 60 seconds to cook.
